Heat the oil in a pan to approx. 160 g. Deep-fry the parsnip until golden, drain on paper towels. Feel free to sprinkle with sea salt. If you prefer leek, the procedure is the same. Cut the apple into small 0.5 cm cubes and mix with Frøya's "Wasabi mayo". Mash the avocado with a fork. Mix in a squeeze of lemon, salt and pepper. Cut the salmon into small pieces. Layer the avocado, apple mixture and salmon in 4 small glasses. Top with parsnip chips and a sprinkle of cress. Feel free to use chips with sea salt if you don't want to fry the parsnips. The chips can be crushed into smaller pieces and sprinkled on top.
