Boil water and add sugar. Make sure everything is dissolved. Pour the mixture over the cucumber slices and place in the fridge. Marinade: Chop all ingredients, mix with soya and honey Pour the marinade into a zip-lock bag. Cut the salmon into pieces and place them in the sauce. Leave to marinate in the fridge for half an hour. Toast sesame seeds in a dry pan. Cook the rice according to the instructions on the packet Fry the salmon on a medium-high heat for 2-3 minutes on each side. The salmon should have a pink centre - DO NOT overcook. Remove the salmon from the heat and let it rest. Pour the rest of the marinade into the pan and let it reduce for a couple of minutes. Arrange the rice and place the salmon on top. Pour over the thickened marinade. Serve with cucumber salad, coriander, sesame seeds and lime wedges.
