Leave the salmon at room temperature for 20 minutes before frying Cut the salmon into 8 triangles and brush with oil. Season with salt and pepper. Pickled cucumber & red onion Slice the cucumber lengthways with a cheese slicer and thinly slice the red onion and place them in separate bowls. Boil the water, sugar and vinegar in a saucepan until the sugar has dissolved and pour into the bowls. Leave to stand for about 20 minutes. Fennel slaw/salad Use a mandolin or cut the fennel into thin slices and place in a bowl. Mix in 1 tablespoon lemon juice, salt and pepper.
